The Quebraditas coffee farm spans two locations in Oporapa, Huila, a region in Colombia’s Central Mountain Range renowned for world-class specialty coffee. Situated between 1,600 and 1,850 meters above sea level across 18 total hectares (10 planted with traditional and exclusive varietals), this family-run project produces unique, distinctive coffees through soil-first agronomics and a precision 9-step craft process.
Cup quality starts in the fields using strategic shading, organic enrichment, and precise pH management via lime treatments. During harvest, cherries are picked at a minimum 80% ripeness and sorted by floating. The coffee undergoes two 24-hour oxidation phases (pre- and post-dry pulping), a 45°C hot-water thermal shock to remove 80% of the mucilage, and a 36-hour aerobic fermentation below 25°C using select yeasts. The fermentation is sealed with a cold 5°C wash, followed by 76 hours of drying at 40°C and final stabilization in GrainPro bags to lock in peak flavor.
