Augusto Ortega’s Sidra is a standout example of what happens when a seasoned producer turns their expertise toward rare varieties. A cornerstone of the San Agustín community, Augusto founded Finca Asturias in 1985 and has since become a pivotal mentor within the Monkaaba producer group. We are releasing this lot alongside a Pink Bourbon from his older brother, Daniel, highlighting a family legacy that has shaped the landscape of Huila for decades. This Sidra was selected for its exceptional vibrancy and clean profile in the cup. The processing is rigorous: cherries are hand-selected at peak ripeness, followed by a 36-hour dry fermentation in oak tanks and a patient 20-day shade-drying period. We chose this coffee to support Augusto’s forward-thinking vision and his commitment to collaborative growth among local smallholders. By securing this lot at a farmgate price nearly double the national average, we continue our focus on transparent partnerships that reward high-level craftsmanship.
