Wilton Benitez is a Colombian coffee farmer with over 26 years of experience, 16 of which have been in specialty grade coffee. His farm, Granja Paraiso 92 uses advanced farming systems such as drip irrigation, shading, and laboratory nutrition to produce some very unique coffees.

This particular coffee was first fermented in cherry for 48 hours, depulped and then fermented in the absence of oxygen for an additional 68 hours.

We love this coffee for its bright acidity, and its strong stonefruit character. Perfect as a double espresso, in a cortado, or hot out of your dripper of choice!
