Located in the municipality of Casillas within Santa Rosa, Allan Melgar’s farm, Las Flores, is a 28-hectare estate that has become a standout name in the specialty coffee world. Allan, a third-generation producer, works alongside his father, Fernando Melgar, to balance traditional farming wisdom with modern, experimental techniques. Situated at an elevation of approximately 1,850 meters, the farm benefits from a high-altitude microclimate that allows coffee cherries to develop slowly, resulting in a distinctively sweet and complex cup profile.
The farm is particularly recognized for its commitment to Natural processing. At Las Flores, this involves a meticulous 25-to-30-day drying period on patios under direct sunlight, following an overnight fermentation in tile tanks.
This specific offering highlights one of the farm’s prized heirloom-style varieties. The Pache San Ramon is a natural mutation of Typica that is well-suited to the high altitudes of Santa Rosa. When processed as a Natural, it yields a syrupy, heavy-bodied coffee with vibrant fruit notes—in the cup we taste raspberry chocolate cake, red wine, and a jammy body. The combination of the variety’s inherent sweetness and Allan Melgar's controlled drying process creates a "funky" yet clean profile that makes it a favorite for both espresso and filter brewing.
