Wilton Benitez is a Colombian coffee farmer with over 26 years of experience, 16 of which have been in specialty grade coffee. His farm, Granja Paraiso 92 uses advanced farming systems such as drip irrigation, shading, and laboratory nutrition to produce some very unique coffees.

This particular coffee was first fermented in cherry for 52 hours, depulped and then fermented in the absence of oxygen for an additional 44 hours. Finally the coffee was washed and dried in two stages at two different temperatures.
